What is the AN/TN and molecular weight in Daltons for this as well as the pepto-pro?

PeptoPro is a hydrolyzed casein, not whey.

I don't know the AN/TN, but the PP is 80% below 320 daltons for a molecular weight, it's on the product page. I don't know any of the other answers though, we'll just have to weight for Alex on this one.

I just got Alex's latest PR newsletter and now understand exactly which protein mrnick was asking about (I had assumed he was referring to either the 520 or the 1400).

Kudo's go out to Alex for providing PF users with both a "Chevrolet" and a "Cadillac" version of your hydrolyzed Casein's (Hydrolyzed caseinate 1300 vs PeptoPro) and your hydrolyzed Whey Isolates (Hydrolyzed 1400 vs Hydrolyzed Ion Exchange Whey Protein Isolate).

You already have a "Cadillac" version of your hydrolyzed Whey Protein Concentrates (hydrolyzed 520) ... and plans on coming out with a Chevrolet-budgeted hydrolyzed Whey Protein Concentrate?

Amino Nitrogen/Total Nitrogen (AN/TN Ratio).
The AN/TN ratios are routinely referred to in the pharmaceutical industry and are used as indicators in characterization of enzymatic hydrolysis of proteins.

The total nitrogen (TN) of a protein can be determined by standard procedures such as the Kjeldahl or Leco method. The amino nitrogen (AN) can be determined by the Formol titration method. Formol titration measures the amino groups in a protein or a protein hydrolysate. Upon enzymatic hydrolysis of the peptide bonds in a protein, new amino groups are released - one amino group for each peptide bond broken. The number of newly formed amino groups causes a linear increase in the amino nitrogen (AN) as determined by the Formal titration method. Dividing the AN by TN and multiplying by 100 gives the actual AN/TN ratio.

Non-hydrolyzed protein will contain some exposed amino groups. Therefore, it should be understood that the AN/TN ratio of the proteins is greater than zero percent. An increase in the AN/TN ratio over that of the original non-hydrolyzed protein provides an estimate of the degree of hydrolysis. It should be noted that the amino nitrogen (AN) determined by the Formol titration method does not represent the free amino acids present in the hydrolysate. It merely estimates the concentration of free amino groups of peptides and proteins.

In laymans terms. You got a protein powder. You test it for nitrogen. you get a number. then you hydrolyzed the protein powder using enzymes. You test THAT to give you your amino number. Why? because you just made new groups of "PEPTIDE". Maybe 2 or 3 aminos linked together instead of just one gigantic one BEFORE we hydrolyzed the protein.

Keep in mind also if you want to get even more technical, which I dont really even care about, but the types of ENZYMES you use to hydrolyzed the protein can matter. But thats even taking it a little to far in my book
